The deep-fried tasty little situation that is rocking my food mind world. A couple of key ingredients are spices. Really worth investing in them as they carry through to most Indian recipes. My story of Pakoras goes way back to my very first cafe in wholefoods vegan in 2010. I had them on the menu. Bestsellers every month they were. I remember serving them with a big salad with the Pakoras piled on top. The smells coming out of the kitchen at that time were like authentic Indian restaurants.

1 Β½ cups Besan Flour
Water, as needed
1 cup Grated Pumpkin
1 Tomato, quartered, deseeded and julienned
2 cups Spinach Leaves
1 cup Fresh Coriander, roughly chopped
1 Β½ Tbsp Curry Powder
1 tsp Cumin Seeds
12 Nigella Seeds
Salt, to taste
Coconut Oil, for frying

Combine the flour and water to make a batter.
Stir in the remaining ingredients and season well.
Heat some oil in a pot, pour in ΒΌ cup of the batter, and fry until browned. Repeat with the remaining batter.
Drain and serve warm.
