Simple Homemade Margarita
1 ½ oz Tequila
1 oz Fresh Squeezed Lime Juice
¾ oz Triple Sec
½ cup Crushed Ice
1 Lime Wedge
Kosher Salt (Coarse) for rim
Run the lime wedge around the rim of the glass.
Place salt in a bowl or on a plate, press the rim of the glass into the salt to create a salted rim.
Squeeze the lime into the glass, then place the wedge inside the glass.
Combine the crushed ice, tequila, triple sec and lime juice in a cocktail shaker and shake well.
Pour into the glass and enjoy!
Family Style Pulled Chicken Tacos
Pulled Beer Braised Chicken (See separate recipe)
Taco Shells (your choice)
Sliced Jalapenos
Diced or Sliced Avocados
Fresh Cilantro
Lime Wedges
Queso Cotija ( available at most grocery stores)
Simple Beer Braised Chicken Thighs for Tacos
Chicken Thighs 5lbs ( you can use bone-in or boneless. Bone-in will have more flavor, however, will require a little more work at the end removing the bones after braising)
Taco Seasoning 1 cup
Oil as needed
Celery Diced ½ cup
Onions Diced ½ cup
Carrots Diced ½ Cup
Beer (Your Choice) 3 cups
Chicken Stock or Broth 1 cup
Fresh Garlic 6 cloves
Chipotle Chili Flakes 1 TBS
Pat chicken thighs with a clean dry towel to remove as much moisture as possible.
Dredge chicken thighs in taco seasoning completely covering.
In a hot pan with oil, brown seasoned chicken thighs.
After browning, place into a casserole dish, heavy roasting pan, or disposable aluminum pan and add in all ingredients.
Cover the pan with plastic wrap, then aluminum foil.
Bake at 350 for about 2-2 ½ hours until tender.
Remove from oven and allow time to rest at room temperature, just until you can safely pull the chicken apart with tongs.
If you used bone-in chicken, make sure to remove all bones.
Season with salt to taste if necessary.
