Subject: Banana Pudding

1/2 cup to 3/4 cup sugar
1/3 cup flour
Dash salt
1 box of vanilla wafers
3 to 4 ripe bananas
2 3/4 cups whole milk
3 to 4 egg yolks
1/4 Stick salted butter
2 tsp. Vanilla

Meringue
3 to 4 egg whites (room temperature)
1/4 cup sugar
1/4 to 1/2 tsp cream of tarter

Preheat the oven to 350°

In a glass bowl add sugar, self rising or all purpose flour, and dash of salt. Whisk ingredients together well. Add egg yolks and milk and whisk well. Microwave on high 3 minutes. Take pudding out of microwave and whisk making sure to whisk flour off bottom of bowl.Put back in microwave for 2 to 3 minutes until thick and creamy. Take it out and add 1/4 stick butter and 2 teaspoons of vanilla flavoring stir well.

Meringue
Add egg whites, Sugar, and cream of tartar . Mix at low speed three minutes. Turn it up to highest speed. Beat 2 to 3 minutes or longer if needed Until stiff peaks form.

Add vanilla wafers and bananas. Pour pudding over top should be thin enough to pour.
Or can layer wafers, bananas, pudding mixture can add several layers. Put meringue on top and bake at 350 until brown on top.

If pudding gets to thick can add more milk! A little at a time until the right Consistency!
