Our Chesapeake Bay farmed oyster

Hollywood Oyster company is an oyster farm practicing sustainable aquaculture on the Western Shore of the Chesapeake Bay. Oysters are grown in cages in a shallow sandy bottom cove that is shared with a state park. Our oysters are tumbled regularly which develops a deep cup and large firm meat. Sweet Jesus and Hollywood oysters are medium brine sweet oysters; they have a merroir of subtle minerality, and a distinctive nutty finish that brings out the best of the oyster. At nursery, all of our oyster seed are held in these silos. Once a week we clean all of them to get rid of dirt buildup or anything that could be harmful to our growing oysters, such as bryozoa.

One of the greatest parts of working at Hollywood Oyster Company is getting to see all of the different marine life around us! Every once and a while we’ll see dolphins jumping in the water, if you watch till later in the video there’s one jumping completely out of the water! 🐬 🦪

Typically, nursery starts off the week by shaking all the 1/4in oysters we sifted from the previous week. Any oysters that fall through the screen are 1/4in and are put back into the nursery silos. The oysters that don’t fall through are the 3/8in oysters, and at that size we bag them up and put them out in the water. 🦪🌊

This is how we sift our 1/8in oysters to get our 1/4in oysters. At this point in the season most of our seed are 1/8 oysters, and are bumping up quickly to the 1/4 size! 🦪
